Crock Pot Spicy Pinto Beans

Pinto Beans are a good source of fiber, taste good, easy to make and provide a great side dish. So, I thought I would share my Crock Pot Pinto Bean recipe. I like using the crock pot to cook Pinto Beans during the hot summertime because it doesn't heat up the kitchen and you don't have to 'baby sit' the beans while they are cooking.

Let's Try It!

Ingredients:

  • 1 16 oz. bag dry pinto beans
  • 1 tsp. salt
  • 1 tsp. fresh ground pepper
  • 1 tbsp. chili powder
  • 3 garlic cloves (or to taste)
  • 1 medium onion
  • 6 slices bacon (or a ham bone works well, if it's got a little meat on it)
  • 2 jalapeno peppers, optional (or to taste)

Directions:

1. Thoroughly wash/rinse pinto beans & place in crock pot with enough water to cover about 1-2 inches above beans.
2. Add salt, fresh ground pepper, chili powder & give the beans a good stir.
3. Mince the garlic, chop the onion & add to the beans. Give the beans another good stir.
4. Chop or dice the bacon. Add to the beans. Slice the jalapenos & add to the beans (I include the seeds. Like my HEAT).
5. Cover the beans & cook on high for 1 hour, stir the bean mixture, reduce to low and cook for approximately 4 more hours*. You can stir the beans occasionally or do a little taste test, but don't leave the lid off for any extended period of time.
6. Do a little taste test, adjust seasoning if desired. 

*note: Not all crock pots cook the same, so you may need to cook longer. And I do not like 'mushy' beans. If you prefer, you can cook on high longer.
