Bob's Big Boy Strawberry Pie Knockout!

Bob's Big Boy! You do remember Bob's, right? Founded in 1936 in Southern California with the iconic Big Boy statue! Well, Bob's is still around. For some of the storied history of Bob's Big Boy, click on: Bob's Big Boy! Besides being famous for their original Double-Decker Burger, their Chili Size (yum) and many other dishes, they had/have a terrific Strawberry Pie with a very unique flavor.

So a recent opportunity presented itself when our neighbors gave us a large bag of cleaned, fresh strawberries. I went to work creating my version of Bob's Big Boy Strawberry Pie, which I will call Big Boy Strawberry Pie Knockout! There are literally tons of strawberry pie recipes and many that refer to the famous Bob's Big Boy Strawberry Pie. Who knows if anyone has the "true" recipe, but this recipe is good (at least I think so...) and quite easy to prepare. If you are ready... 

Let's Try It!

 

 

Ingredients:

  • 8 oz. frozen whipped topping thawed according to package directions, such as cool whip
  • 1 frozen pie crust from your favorite market (I used Marie Callenders
  • 2 tbsp. butter
  • 1 to 1 1/2 lb. fresh strawberries
  • 1  3 oz. pack strawberry gelatin, Jello works fine
  • 1 lemon-lime soda (approximately 10 oz.), such as Shasta Twist
  • 3 tbsp. cornstarch
  • 1/2 tsp. kosher salt
  • 3/4 c. granulated sugar

Preparation:

1. Pre-heat oven to bake pie crust, according to package directions. Before baking, melt butter and brush on pie crust. Bake crust & let cool completely.
2. While crust is baking, clean & slice strawberries removing hulls.



3. To make the glaze whisk sugar, cornstarch & salt in a small saucepan.
4. Mix lemon-lime soda with sugar mixture & cook over medium heat stirring occasionally until it begins to thicken.





5. Remove sugar mixture from heat & whisk in strawberry gelatin. Cool gelatin & in order to speed cooling process, you can place saucepan in a "ice bath". 






6. Layer the sliced strawberries in the cooled crust.








7. Evenly pour & distribute the cooled glaze over the strawberries. Cover pie & chill for at least 2 hours.
8. Slice & serve pie with a heaping scoop of whipped cream topping. And you could always garnish with a small sprig of fresh mint!
