Cold Spaghetti Salad

Cold Spaghetti Salad - Simple & Easy to make:

Since we've been having this Spring/Summer like weather, I wanted to try something a little different. Cold Spaghetti Salad hit the spot! Just add some crusty Garlic Bread and you have a 'one pot' meal. To reduce the fat and carbs, you can use whole grain spaghetti and fat-free Italian dressing. Give it a try!


Ingredients (makes 8-10 servings):
1 lb. spaghetti (or any kind of your favorite pasta)
1 red onion, coarsely chopped
2 cucumbers, coarsely chopped
2 green peppers, coarsely chopped
1 pint grape tomatoes, sliced in half (you could use cherry tomatoes)
2 1/4 oz. sliced black olives
1/2 to 2/3 bottle McCormicks Salad Supreme - divided
10-12 oz. Italian Dressing, divided

Directions:
1. Cook spaghetti according to package directions. Rinse in cold water until cool. Place in large bowl.
2. Add 1/2 Salad Supreme to spaghetti and 1/2 Italian Dressing.
3. Add chopped onion, cucumbers, green peppers, tomatoes, and olives to spaghetti mixture, toss gently.
4. Add remaining Salad Supreme and Italian Dressing to spaghetti mixture, toss gently.
5. Salt & pepper to taste.
6. Cover & refrigerate for at least 2 hours before serving.
