Another Beat the Heat Dish
Sesame Beef & Broccoli - Slow Cooker Style
In my previous post, Asian Spiced Cucumber Salad, I made mention of this slow cooker dish. These two dishes were a great combination, easy to make and not the kind of intense cooking that required constant or overlapping attention. This is just the way I like to stretch out the chore of bringing a meal to the table with a casual, leisurely approach. Wine time, anyone?You can get the Beef & Broccoli recipe started in the morning. Take a break and mix up the Asian Spiced Cucumber Salad around mid-day. Then, take another break, finishing off the the Beef & Broccoli and Asian Spiced Cucumber Salad in the late afternoon or evening while sipping on a little wine! You might label this 'vacation cooking'!
Let's Try It!
Ingredients: (serves approx. 6)
- 2 lb. boneless beef chuck roast
- 1 (10 oz.) can beef consumme or beef broth
- 1/2 c. 'lite' soy sauce(or a couple tbsp. more...)
- 1/2 c. brown sugar
- 1 1/2 tbsp. sesame oil
- 3 - 4 garlic cloves, minced
- 2 tbsp. sesame seeds
- 2 1/2 tbsp. cornstarch
- 2 1/2 tbsp. beef sauce (sauce from beef after being cooked in the crock pot)
- 12 oz. fresh broccoli florets (or as many as desired)
- Hot steamed white rice (for serving)
Directions:
1. Thinly slice beef or cut into small chunks. Place in crock pot.2. Combine in a bowl the consomme or broth, soy sauce, sugar, oil, garlic sesame seeds. Pour mixture over the sliced beef. Cook on low for 6-8 hours.
3. After the beef has cooked, stir together the cornstarch & beef sauce until smooth. Add to crock pot & stir well.
4. Add broccoli to crock pot. Stir to combine. Cover & cook on high for approximately 30 minutes. The sauce should start to bubble/slightly boil just a little. (This might be a good time to prepare your rice.)
5. Serve over hot steamed rice! You might like to drizzle just a little of the creamy sauce over each serving, letting it soak into the rice.:P
Now enjoy your no heat/low heat Sesame Beef & Broccoli. Don't forget to include your Asian Spiced Cucumber Salad to complete a great tasting meal! And the left over Beef & Broccoli (if there is any) can be stored in the refrigerator about one more day. Then, transfer to a sauce pan and slowly heat/simmer on the stove for another day's meal. The broccoli may not be crisp, but you can add some additional fresh broccoli when heating the leftovers. I simmered the beef & sauce for about 30 minutes, added some fresh broccoli and simmered for another 30 minutes. Prepare some more steamed rice, serve up a little leftover Asian Spiced Cucumber Salad (you did have leftovers, right?:-SS) and you're set!:-bd
