Sweet Potato Pecan Pie
Fall has officially started. The holidays are fast approaching. What's a person to do? Do you need a holiday dessert that's just a little different? 8-7 After seeing a recent Pinterest post for Sweet Potato Pecan Pie by Kevin of Closet Cooking, I had to give this recipe some hands-on and try it! It will not disappoint!
What a great combination of the more traditional pecan pie and sweet potato pie, with a hint of maple and a splash of bourbon (or maybe more than a splash). Top it off with a little French Vanilla Ice Cream or as Kevin suggested, Maple Pecan Ice Cream. You can get his recipe for the Maple Pecan Ice Cream from Closet Cooking. For this effort, I was more focused on trying the pie before tackling the homemade ice cream. So, are you ready?
Let's Try It!
Ingredients:
- 1 pie crust (you can make your own, but I simplified the effort by using a Mrs. Smith's Deep Dish frozen crust from the market)
- 2 c. sweet potato (baked, peeled, mashed)*
- 2 eggs (lightly beaten)
- 1/2 c. brown sugar
- 1/4 c. maple syrup (get the good, pure maple syrup)
- 1 tsp. pure bourbon vanilla extract (you can get this at Trader Joe's, or use your favorite)
- 1/2 tsp. ground cinnamon
- 1/4 tsp. ground ginger
- 1/4 tsp. ground nutmeg
- 2 tbsp. bourbon
- 1 1/2 c. pecan halves
- 1/2 c. brown sugar
- 1/2 c. maple syrup
- 2 eggs (lightly beaten)
- 2 tbsp. softened butter
- 1 tsp. bourbon vanilla extract
- 1 tbsp. bourbon
*Wash potato(s), poke several holes in potatoes with a fork, bake in preheated 400 degree oven for approximately 45-60 minutes. You can test for doneness by inserting a toothpick in the thickest part of the potato & it should easily pierce with no resistance.
Preparation:
2. Mix sweet potatoes, first 2 eggs, 1/2 c. sugar, 1/4 c. maple syrup, 1 tsp. vanilla extract, cinnamon, ginger, nutmeg & 2 tbsp. bourbon in large bowl.
3. Pour mixture into pie crust.
5. In separate bowl, mix 1/2 c. sugar, 1/2 c. maple syrup, remaining 2 eggs, butter, extract & bourbon.
6. Carefully pour mixture over top of pecans.
7. Bake in preheated 375 degree oven for approximately 45-60 minutes. The pastry should be golden brown & the filling set.
For me, this is a 'keeper'. The best news is that Sweet Potato Pecan Pie is easy to make, easy to eat, a great way to usher in the Fall season and a great dessert dish to take to your next potluck! But, you may not want to share... Maybe you should make one for the potluck and one for yourself! ;)
