Tomato Soup Spice Cake! Most people get a very funny, if not strange, look on their face when you ask them if they like Tomato Soup Spice Cake. At least, that's what I found out. Well, today I'm going to share my little version of what turned out to be a delicious new cake recipe. It's very easy to make and it is a "keeper" for me. 

And yes, you do use condensed Tomato Soup in the recipe. Did you know that the first "noted" Tomato Soup was made by Maria Parloa in 1872 and that she was really the first American Celebrity Chef! Now, Joseph A. Campbell's Condensed Tomato Soup recipe, introduced around 1897, became what is probably the most popular Tomato Soup of all time and continues to be one of the top three selling soups for Campbell's. Campbell's Soup sells almost 2 billion (yes, that's a B as in Billion) cans of soup a year. Enough jibber-jabberish! We've got a yummy cake to make... and I'm including lot's of pics today, sort of like the before/after for ingredient mixing. So,


Let's Try It!

 

 

Ingredients:

  • 1 can (10 3/4 oz.) condensed tomato soup(Campbell's naturally)
  • 1 tsp. baking soda
  • 1 c. sugar
  • 1 large egg
  • 1/3 c. butter, softened
  • 1 1/2 tsp. ground cinnamon
  • 1 1/2 tsp. ground cloves
  • 1 1/2 c. self-rising flour
  • 1 1/4 c raisins
  • 1 to 1 1/2 c. cream cheese frosting (You can make it or do it the easy way. I picked up Pillsbury Cream Cheese Frosting in a can. Works great!)
note: Ignore that pesky box of quick oats. That's for another recipe & it was just trying to sneak in on the picture!

Preparation:

1. Preheat oven to 325 ˚. Combine tomato soup & the baking soda in a bowl. Let stand.






2. Combine (cream)the sugar, egg, butter cinnamon &  cloves.







3. Mix tomato soup & soda with the sugar & egg mixture.







4. Stir flour into soup mixture, combining until moist.







5. Stir raisins into soup mixture.








6. Grease/coat bundt pan with non-stick cooking spray. Pam for Baking works great! Pour & spread soup/raisin mixture in bundt pan, even out. Bake in oven for approx. 1 hour or internal temperature reaches about 165 ˚.

7. Remove cake from oven to cool. When cake has cooled enough to handle, invert, removing from pan onto a wire rack, to continue cooling.




8. Transfer cake to your
favorite serving platter. Frost cake with Cream Cheese frosting, enough to your liking... (cake must be completely cooled) .

 Note: Refrigerate leftover cake.



Now you can surprise your guests with a tasty slice (or two) of Tomato Soup Spice Cake. You may not want to tell the FULL NAME of the cake, maybe just call it Spice Cake. See what reactions you get. I was pleasantly surprised. Hope you will be as well! Later gator!
