Grilled Corn-and-Butter Bean Salad
This recipe is in the July Southern Living Magazine. I'm going to serve this with The Southern Lady's Grilled Chicken/Chicken Grillin Sauce ( Chicken Grillin Sauce ) and grilled yellow squash & zucchini.
To simplify things a bit, Trader Joe's ( Trader Joe's ) sells frozen Fire Roasted Yellow Sweet Corn and it's good! Simply, cook (roast) the corn in a large skillet on the stove and let cool while your frozen or fresh butter beans cook. I also added slightly more mayo (to taste & yes, it was the low-fat mayo) and about 3 tbsp. of Worcestershire sauce (I like Worcestershire). Simple recipe, good for the summer months.
