Grilled Ribeye Steaks with Tequila Spice Marinade

You may be surprised.This is a great steak marinade that I have used for several years and it's hard to beat! Ok, so I think it's hard to beat, but it is good. The marinade incorporates tequila, olive oil, black pepper, cilantro, lime zest, garlic, salt, horseradish and bay leaves.
Let's Try It!
Ingredients: (makes enough marinade for 4 ribeye steaks, 1 inch thick)
- Olive Oil
- 1/2 c. tequila
- 1 tbsp. fresh ground black pepper
- 2 tsp. lime zest
- cilantro, chopped (fresh is best and enough to taste)
- 3 garlic cloves, minced
- 1/2 tsp. salt (I use kosher)
- 2 tsp. prepared horseradish
- 2 or 3 bay leaves
Preparation:
1. Using a fork, poke holes in both sides of steaks. Drizzle a little olive oil (about 1 tsp.) on all sides, gently rubbing it into the steaks.2. In a bowl/baking dish large enough to accommodate the steaks, add tequila, pepper, lime zest, cilantro, garlic, salt, horseradish & bay leaves. Lightly whisk to mix ingredients.
3. Add steaks, turn to coat all sides & distribute mixture evenly.
4. Cover & seal bowl. Let steaks marinate for at least 3 hours or overnight for a stronger marinade taste. Occasionally, flip steaks over to re-distribute marinade.
5. Pre-heat grill to medium high (about 375 degrees). Remove steaks from marinade* & grill about 12-14 minutes. Turn once during cooking time.
*note: You can reserve remaining marinade & baste the steaks during cooking time.
