Great Condiment for Comfort Food

Pickled Sweet Onions w/Pinto Beans, Grilled Chicken, Coleslaw

Honestly, I had never heard of this little 'condiment' for Comfort Food until I saw the post from Christy Jordan's Southern Plate. But after seeing Christy's pics, I knew this was a "recipe to pair" with my Crock Pot Spicy Pinto Beans. There was no disappointment when I took my first bite!

While our temps have been hovering in triple digits the past week, this was another "sure-fired way" to keep the indoor kitchen temp down while providing a great compliment to Crock Pot Spicy Pinto Beans along with Caramelized Chipotle Grilled Chicken and Chipotle Cilantro Coleslaw. Let's Try It!

Ingredients:

  • 4 med. sweet onions
  • 2 c. Apple Cider Vinegar
  • 1 c. granulated sugar
  • 1 tsp. salt
  • 1 tsp. fresh ground black pepper
  • 1 tsp. garlic powder

Directions:

1. Peel & slice onions into rings. Cut rings in half & separate.
2. Place vinegar, sugar, salt, pepper, garlic powder in medium sauce pan. Heat over medium heat until mixture starts to boil. Stirring often.
2. Remove mixture from heat. Stir in onions, partially cover & let sit for 5-8 minutes.
3. Stir onion mixture again, partially cover & let sit for another 5-8 minutes. Onions should be somewhat wilted.
4. Place mixture in a container, tightly cover & refrigerate until completely chilled. Now, if your container is not 'tightly' covered, your refrigerator is going to have that wonderful vinegar smell! :)

Serve as a side or on your favorite Crock Pot Spicy Pinto Beans.;)
