Make It Sing a Little
Caramelized Chipotle Grilled Chicken
Getting a little tired of the store bought barbeque sauces or marinades? Want to try a little something new for that summertime grilled chicken? Spice up your grilled chicken with a little homemade Chipotle Grillin' Sauce.
This Grillin' Sauce has that smokey taste of the chipotle peppers, toasty garlic, caramelized onions in a ketchup, cinnamon and brown sugar sauce. And don't be frightened by the chipotle peppers, as they add just enough spice to make it sing! Finger lickin' Good - oops, I think that snippet has been taken by another Chicken King.
Let's Try It!
Ingredients: (serves about 4 - depending on how hungry you are...)
- 1/4 c. extra virgin olive oil
- 6-8 large garlic cloves, thinly sliced
- 2 med. onions, chopped
- 1 c. ketchup
- 2 tbsp. Dijon-type mustard
- 3-4 tbsp. dark brown sugar
- 1/4 c. canned chipotle chiles in adobo sauce, chopped
- 2 tbsp. Worcestershire Sauce
- 2 tbsp. apple cider vinegar
- 1 tsp. ground cinnamon
- 1 tsp. salt
- 1 tsp. ground pepper
- Pam Grilling Spray (or similar grilling spray)
- 1 (3-4 lb.) chicken, cut into 8 pieces
Directions:
1. Heat oil in large heavy skillet over medium-high heat.
2. When oil is heated, cook garlic, stirring often until golden-brown. Transfer to small plate/bowl.
3. Reduce heat to medium, cook onions. Stir occasionally until golden-brown. Takes about 18 minutes.
4. Return garlic to skillet. Add remaining ingredients (EXCEPT CHICKEN &, of course, COOKING SPRAY) to skillet. Give it a good stir. Continue cooking sauce for approximately 25 minutes. Stir occasionally. Sauce should slightly thicken.
5. Transfer sauce to small bowl/container.*
6. Spray grate of grill with cooking spray.
7. Preheat grill to medium/medium high, about 375 degrees.
8. Coat chicken pieces with about 1/2 of sauce. Grill skin side down, approximately 20 minutes.
9. Flip chicken pieces over, bast with more sauce. Grill about another 20 - 25 minutes until chicken is done or internal temp of chicken is about 165 - 170 degrees. Be careful not to overcook - you don't like dry chicken do you?
10. Remove chicken from grill, cover & let rest for approximately 5 minutes.
*note: sauce may be made ahead of time & stored in refrigerator until ready to use, for about 1 day.
Serve with your favorite sides. For me, Crock Pot Spicy Pinto Beans with Pickled Sweet Onions and Chipotle Cilantro Coleslaw worked well!
