'Horsey' Green Beans

A Cool Side for Summer Days

Let's Try It!

Ingredients(4 - 6 servings):

  • 1 lb. fresh green beans
  • salt
  • fresh ground black pepper

'Horsey' - Horseradish Sauce:*
  • 1/4 c. horseradish
  • 1 c. sour cream (I use low-fat or no-fat sour cream, personal preference.)
*note: 'Horsey' sauce will keep for several days refrigerated

Directions:

1. Wash & snip off ends of green beans.
2. Steam green beans for approximately 10 minutes or until desired degree of doneness. I like mine a bit crisp tender.
3. While beans are steaming, whisk together horseradish & sour cream. Refrigerate.
4. Gently toss beans with salt & pepper to taste. Arrange beans on serving platter. Drizzle with 'Horsey Sauce' or serve beans with 'Horsey Sauce' as a side.**

 **note: During summer months, I like to 'make ahead', chill beans & sauce and serve as a Cool Summer Side Salad. This dish also works well as an appetizer for parties!
Today, I'm serving Horsey Green Beans with Paula Deen's Lean Barbeque Meatloaf (which substitutes oats for bread crumbs, uses Splenda Brown Sugar & Egg Beaters), Paula Deen's Oven Roasted Red Potatoes with Garlic & Rosemary (I had some garden jalapeno's I roasted with the potatoes, doesn't go... but we like them), Fire & Ice Pickles and some of my garden fresh sliced tomatoes, seasoned & drizzled with balsamic vinaigrette!

Looks like more than a drizzle of Horsey Sauce, oh well!

note: I originally made this recipe around 1989 & I believe it was included in a cookbook called - Celebrations on the Bayou, Invitations to Dine in Cotton Country Style, by The Junior League of Monroe, LA. It has always been a "keeper"!
