Grilled Chops with Blackberry-Ginger Sauce


Grilled Chops with Blackberry-Ginger Sauce has a little heat, a little sweet and a little spice. Season with Spice  featured this amazing and tasty looking dish, so I just had to try it! Plus, it's Berry Season! The great part, besides the taste, is that this dish is simple to make and you can serve the chops in less than an hour including a side and salad!

So, Let's Try It!

Ingredients Pork Chops(serves 4):

  • 4 pork chops ( I used Trader Joe's bone-in French Cut Chops, approx. 1 inch thick)
  • salt & fresh ground black pepper, to taste
  • 1 tbsp. hot or smoky paprika
  • olive oil
  • fresh Rosemary sprigs (I clipped a few from my garden)

Ingredients Blackberry-Ginger Sauce:

  • 12 oz. fresh blackberries
  • 1/2 tbsp. fresh ginger
  • 1 fresh serrano pepper
  • 1/4 to 1/3 c. honey
  • 1 tbsp balsamic vinegar
  • 1/4 c.  fresh lemon juice - I borrowed a couple of lemons from my neighbors tree ;)
  • salt & fresh ground pepper to taste

Directions:

1. Rinse & pat the chops dry with paper towels. Rub the chops with olive oil, season generously with salt, pepper & paprika. Set aside.
2. In a mixing bowl, mash the blackberries into a sauce-like consistency leaving some chunky bits for texture.
3. Mince the ginger, add to berries. Mince the serrano pepper, add to berries. Add the honey, balsamic vinegar, lemon juice, salt & pepper. Combine.
4. Transfer the mixture to a saucepan and heat to simmer, cooking for 8-10 minutes*, stirring occasionally. Adjust seasonings to taste. Sauce should slightly thicken. When finished, set aside & keep warm.
5. Cook chops for approximately 6-8 minutes per side, depending on thickness of the chops. Remove chops from grill, set aside & keep warm for 3 - 4 minutes to allow juices to settle.


*note: While sauce is simmering, preheat grill to approximately 350 - 375 degrees (medium).

To Serve:

 Place each chop on a plate, drizzle (or drown, to your liking) with the Blackberry-Ginger Sauce, garnish with rosemary. Serve your favorite side and/or salad. I chopped up some broccoli, carrots, onion & bell pepper seasoned & drizzled with a little olive oil and cooked on the grill with the chops. And also included a fresh arugula salad with grape tomatoes, sliced persian cucumbers & thinly sliced red onion.
