Banana Cream Nilla Wafer Poke Cake

 

Did the Holidays drive you BANANAS? Take a load off and try a little Banana Cream Nilla Wafer Poke Cake, a cousin of Banana Pudding! Banana Pudding has been around since dirt or maybe before dirt. ;)

And don't forget about the National Banana Pudding Festival! Yep, that's right! You have plenty of time to plan your trip, since the next festival is October 5-6, 2013, Centerville, TN. There will be lots to do at the festival - National Banana Pudding Cook-Off, crowning of Miss Banana Pudding, Banana Pudding Eating Contest and tons of 'comfort food' to 'sample'. Let's Try It!

Ingredients:

  • 1 box yellow cake mix (I prefer Pillsbury Moist Supreme) +
  •    eggs, oil & water required for mix
  • 1 5.1 oz box instant banana cream pudding mix +
  •    3 c. cold milk for mix
  • 1 8 oz. tub frozen whipped topping, thawed (such as Cool Whip)
  • 20 to 25 vanilla wafers, crushed (I used mini Nilla wafers, 3-4 handfulls)
  • Fresh bananas & additional vanilla wafers (optional)

Preparation:

1. Prepare yellow cake mix according to package directions, using 13 x 9 in. pan.
2. Remove cake from oven when finished cooking, let cool approximately 1 minute. Then poke holes in cake using the handle of a wood or heavy plastic mixing spoon. 
3. Whisk banana cream pudding mix & milk together until completely combined. Let pudding rest for about 1 - 2 minutes. Pour pudding all over top of warm cake, trying to get pudding to sink into the holes. You can use the back of the mixing spoon to gently press/smooth the pudding over the cake top.
4. Cover & place the cake in the fridge to completely cool & to let the pudding set.
5. When cake is completely cooled, gently spread the thawed whipped topping over the top.
6. Crush vanilla wafers (you can put them in a 'ziplock' bag & crush with a rolling pin or your hands. Sprinkle crushed vanilla wafers on top.
7. Leftover cake should be stored in the refrigerator. 

Now dig in! You can garnish with sliced bananas or additional vanilla wafers when serving.
