Y ou can Rock Your Crock with this tasty and Spicy Taco Soup Recipe. It's quick to toss together. Just start it in the morning and let it simmer all day, while you play away! Can I get a double Yippee!

W here did Taco Soup originate? I have no idea. Do you? It seems more like a "gringo" kind of thingy! However, if you are weary of picking up your tasty taco's and having some of the delicious morsels tumble to your lap or the floor for your little four-legged friend to lap up, then Spicy Taco Soup is just a "spoon" away.




A nother great little feature for this Spicy Taco Soup is that you can "dress it up" any ole way you please! There are just lots of options. So, ¡no deje pasar más tiempo! 


I t's Spicy Taco Soup time. Let's Try It!



Ingredients: (Serves approx. 6-8)

  • 1 lb. lean ground beef (I use 96/4).)
  • 1 ranch dressing packet mix (1 oz.)
  • 1 taco seasoning packet mix (1 oz. & I used the Lawry's Hot mix)
  • 2 15 oz. cans diced tomatoes
  • 2 15 oz. cans whole kernel corn, with juice
  • 2 15 oz. cans pinto beans, drained & rinsed
  • 2 15 oz. cans kidney beans, drained & rinsed
  • 1 10 oz. can diced tomatoes with green chiles ( I used Ro Tel.)
  • salt & pepper to taste
  • *optional: 3 or 4 small whole jalapenos (or to your preference) Wait! Where are my jalapenos in the pic? Ugh. Well, I just plucked a few from my plant in the garden!
garnish/toppings: sour cream, shredded cheddar cheese, sliced pickled jalapenos, sliced avocado, tortilla chips, chopped green onions

*note: I toss the whole jalapenos in the pot with all of the other ingredients while cooking to add a little extra zing & serve one or two with each bowl. They can be cut up or swallowed whole!

Preparation: ( 5-6 quart slow cooker should be used)


1. Using a skillet, brown ground beef and drain. Add meat to slow cooker. 
2. Sprinkle ranch dressing & taco seasoning packets over cooked ground beef. 










3. Add drained & rinsed pinto and kidney beans to slow cooker.
4. Add corn & tomatoes, including tomatoes with green chiles. 










5. Stir to combine ingredients. And if you are adding whole jalapenos, just toss on top to start. 
6. Cover slow cooker & cook on low for approximately 8-9 hours, stirring a couple of times to blend flavors. But don't dawdle with that lid off, cause those flavors gotta meld together!
7. When finished cooking, serve with your favorite toppings.


note: You can refrigerate your leftovers(if you have any), heat and serve in the next day or two. Mine tasted even better the next day, I think.
