Asian Coleslaw
Several months ago, I needed a simple side dish to take to a pot luck and I wanted something a little different. I found this recipe on Menu Musings of a Modern American Mom, made a couple of little changes and everyone loved it! The pot luck folks literally licked the bowl clean! So, it was a natural compliment for my Wow Kung Pao Chicken recipe.

Over on Menu Musings Julie offers a recommendation to make this a "one pot meal" by simply adding some cooked chicken. For a warm summer day, not wanting to overheat the kitchen, one easy way to accomplish this would be to just pick up some grilled or rotisserie chicken from your favorite market. Slice the chicken and add when serving.

This is easy to prepare, can be made in advance, serves quite a large group and I think you will love it. So,

Ingredients:

  • 2 pkg. Ramen Noodles (note: Seasoning packets are not used.)
  • 3/4 c. slivered almonds
  • 1/2 c. sesame seeds
  • 3 - 4 tbsp. oil (olive, peanut, canola, vegetable), or 1/2 c. butter
  • 1 pkg. prepared coleslaw mix (These are usually about 12-14 oz. & pre-shredded.)
  • 2 - 3 c. purple cabbage, shredded
  • 1/2 c. green onion, chopped + approximately 1/4 c. for a little garnish (if desired)
  • 1 c. sugar
  • 1 c. vegetable oil, or you could try olive, canola, peanut...
  • 1/3 c. red wine vinegar
  • 2 tbsp. soy sauce

Preparation:

1. Crumble Ramen Noodles. Heat oil or melt butter in a large skillet. Add the crumbled noodles, almonds & sesame seeds. Brown. After browning, drain & cool on paper towels.




2. While noodle mixture is cooling, chop green onions, shred cabbage & mix with coleslaw.
3. Combine the noodle mixture with the slaw mixture. As Julie says, it makes for a "pretty picture". At this point, you can cover & refrigerate until ready to serve or until the dressing is mixed, which is the next step.


4. For the dressing, whisk together the sugar, oil, soy sauce & vinegar. You can place in a small jar or something similar & refrigerate as well. DO NOT pour on coleslaw mixture until shortly before you are going to serve it (ya don't want your slaw to get soggy...). When serving, pour dressing over coleslaw & toss to coat. Garnish with a few chopped green onions if desired.

How easy was that! This coleslaw is great for warm days when you want to keep your food prep heat down, perfect for pot lucks, looks "pretty" and is delicious! Enjoy!
