Easy One Hour Shrimp Creole

 

It had been quite a long time since we dined on shrimp, of any flavor or mix. I was searching Pinterest for some shrimp recipes and saw a recent post by Judy from her blog The Southern Lady Cooks. It caught my eye and peaked my interest. Judy calls this dish Spicy Shrimp Creole. And it does have a little kick, but I thought a more accurate description was Easy Shrimp Creole. You can whip this tasty meal up in under one hour, including the rice to serve it over along with a little side salad. You can even get in one or two glasses of wine during the process! ;) Works for me!

Let's Try It!


Ingredients:

  • 1 lb. fresh shrimp, peeled & deveined
  • 1 med. onion, chopped
  • 1 c. green bell pepper, chopped
  • 1 c. celery, chopped
  • 4 tbsp. olive oil or canola oil (gotta watch that fat...) ;)
  • 1 14.5 oz. can diced tomatoes (I used diced tomatoes with basil, garlic & oregano.)
  • 1 8 oz. can  tomato sauce
  • 1 4 oz. can diced green chilis
  • 1 1/2 tsp. minced garlic
  • 1 tsp. Creole seasoning (or more to taste, I used about 2 1/2.)
  • 1 tbsp. Worcestershire sauce
  • 1 tsp. chili powder (or more to taste)
  • 2 bay leaves
  • salt to taste (about 1 tsp.)
  • fresh ground black pepper to taste(about 1/2 tsp.)
  • hot sauce to taste (you can always serve a little on the side to kick it up) B-)

Preparation:

1. Heat oil in a large skillet over medium/medium high heat. Add onion, celery & green pepper (aka Holy Trinity). Cook until mixture starts to brown slightly.
2. Add tomatoes, tomato sauce, chilis, garlic, Creole seasoning, Worcestershire sauce, chili powder, bay leaves, hot sauce, salt & pepper. Give it all a good stir, reduce heat & simmer for approximately 30 minutes.
3. Add shrimp to mixture, stir and simmer about six to eight more minutes. Don't overcook your shrimp! Remove bay leaves and serve. This recipe will serve 4 - 6 people.

note: While the mixture is simmering, you can prepare your rice and throw a little side salad together! I used my little rice steamer and cooked up about 1 1/2 to 2 cups of rice in under 30 minutes.
